I thought it was because that the fuel from the planes cause it to burn at a higher temperature, which changed the phase/structure of the steel of the building, that's what cause the most damage.

They didn't defy physics. The structural strength of steel is derated at high temperatures (this means, at high temperatures, steel will fail at lower stresses). So if you have steel that is suddenly the strength of wood + the weight of the building and forces of wind, you have one doomed building.

This is an iron-carbon (basically steel) phase diagram. For temperatures lower than 727 C (or 1340 F) it is in an alpha-Fe3C phase (a stable BCC crystal structure), above that it transforms into austenitic FCC form which has a much weaker structure than it's alpha-Fe3C phase. This is materials science at it's very basics.
