the rest of my dinner was blah, but i found some great fresh tomatoes at the farmer's market today and had those sliced up with salt and pepper. best part of the meal

The ribs I made for the 4th turned out pretty awesome. Here's the rub if anyone cares, pretty standard but was good:
1 C dark brown sugar 1/2 C paprika 2-1/2 TBS coarse black pepper 2 TBS kosher salt 1-1/2 TBS garlic powder 1-1/2 TBS onion powder 1-1/2 tsp chili powder 1 tsp cayenne pepper then I smoked using the 2-2-1 method, 2 hrs straight smoke at about 200-225 deg, then 2 hrs wrapped in foil with a splash of apple juice, then 1 hr straight smoke again. |

I just made oatmeal raisin cookies and chocolate chip muffins from scratch. The cookies are done. They turned out great. I'm waiting on the first batch of muffins to finish. I've never made muffins before so we'll see how they turn out. I'll post the recipe if they turn out good.

I don't like raisins too much, but I made them for my husband. If you life raisins, I suggest adding extra. Also, the cook time was about 9 minutes with a dark pan for me. |

Hmm... a tad disappointed with the muffin recipe I used. I thought the batter was a tad too thick when I was making it, but figured I would keep going anyway. I have made muffins using the store mix before, and the consistency of the batter is thin like cake batter. The batter for this was closer to cookie mix. I think I should have altered the recipe a bit and added more milk, but I don't even know that that would have fixed the problem. Anyways, they taste good, but they are rather thick and the top is almost like corn bread it's so thick.

What sorta recipe like that doesn't call for oil...? Yeah, I should have thought it through a bit before making them. Kinda dumb that they don't have oil in them. Most cake recipes call for 1/3 cup of oil. I think next time I make these, I will experiment with adding that much oil.

If you forget the eggs when making a cake, it doesn't come out less moist, it comes out flat I believe. My mom accidentally did that once. When making a cake, if you substitute apple sauce for the oil, it makes it even more moist. That's why I'm pretty sure it's vegetable oil or apple sauce that needs to be added.

I'm saying there's already vegetable oil (melted butter/margarine) in the recipe you posted. This one, right? http://www.mrbreakfast.com/superdisplay.asp?recipeid=239 Might need more, but half a cup really should be plenty.
Applesauce can indeed be subbed for vegetable oil as far as moistness is concerned, but I'm not sure it goes so well in a chocolate chip muffin recipe. The reason I suggested an extra egg is because it'll make the finished product more fluffy, which might be what it needs.
