Made an interesting chicken meal last night. It was quite tasty.
Broiled some boneless/skinless chicken breasts in the oven. Topped them with salt, pepper, red curry, garlic. Cooked a thick onion-green curry broth on the stove. (4 large diced onions, fresh diced garlic, green curry, couple cups of milk, water to thin out to desired consistency) Poured the soup of the finished chicken for a very tasty dinner. -------------------- |

I made a brown rice/lentil/pecan casserole last night for dinner and had leftovers of it for lunch. It was uber-tasty and filling.

It's this recipe, except that I couldn't find tempeh at HEB, so I decided to go with lentils: http://www.recipezaar.com/13578
