Hey, the baking soda is to help absorb odors. Plus in the bottom drawer is a slab of bacon.

That might be a concern if these beers were some macros piss with low alcohol and barely hopped. A lot of the beers in there are quite high in alcohol. When they first are released they might come out as hot or solventy, but as they age, the alcohol begins to mellow and the taste changes, much like wine. Unlike wine, most of these beers will benefit from aging. Some breweries will put best before dates, but the stronger beers have up to a 7 year shelf life.
