my father works as a USDA health inspector at that meat packing plant in plainview. he used to tell us all the time that "humans have sanitized themselves to the brink of extinction" meaning that we remove so many forms of sickness from contact with ourselves that we no longer have the immunities to them that we once did. he has some more complicated views on other similar subjects, but bottom line is that he knows that 3 generations ago humans ate meat that would be thrown away by modern standards, without any problems or sickness at all.
