Actually, the muffins I made are starting to grow on me. Yeah, they are thick, but they are oh so yummy. Like I said earlier too, everything I am reading is saying this is how traditional muffins are supposed to be. Hmm... I guess I won't waste my time making a new batch.

I experimented tonight, and I think it came out pretty well.
I took about 1/2 cup of cracker meal (basically the same thing as bread crumbs just smoother IMO) and added Cajun spice (about a tablespoon, maybe more) and salt. I battered chicken breast in that mixture (soaked the breast in egg first of course) then sauteed it with habanero garlic in vegetable oil for 3-4 minutes on high heat and then 15 minutes on low heat. I made sides of wild rice and buttered corn. A sort of Cajun dinner I fixed up. Everything turned out really really good. |

haha... no.. I just like how gooey they are!
On a different note, I just experimented with dinner again. It wasn't too different than what I did the other day, but it had some slight differences. I mixed 1/2 cup cracker meal with some paprika, garlic salt, black pepper, and chili powder. I dipped chicken breast in egg and then dipped it in that mixture. I fried it in about 2 tablespoons of vegetable oil on medium heat for 3 minutes on each side, then turned the heat on low heat and added mesquite flavor to each side. I then cooked it for about another 12 minutes. I made instant mashed potatoes, corn, and bread rolls for the sides. Everything came out well. |
