well use boneless skinless chicken breasts of course. I prefer to cut mine on a bias before marinating.

marinade is 2 tablespoons olive oil, one tablespoon (more or less) of Indian red curry paste (the kind that looks like it has seeds in it), and 1/2 a tablespoon of Thai red curry paste. My g/f and I like it spicy so I also throw in a few dried pepper spices to taste. Last night I also added just about a teaspon of teriyaki marinade. Sometimes I add soy or worchestire sauce, but I was out. Wisk all together, and boom.

I then add the chicken, marinade for about 4 hours in the fridge. Cook in a medium skillet over medium heat with some red peppers and onions in the pan as well (tossed with the chicken and marinade just because going into the pan) then I cook with a lid over the skillet for about 5-6 minutes, stirring occasionally.

I haven't had much of an appetite today...which is weird because I usually eat A LOT because I'm pregnant. That, and I have been very active today. All I had to eat today was a happy meal from mcdonalds.
