So, I've decided to work out a new backup plan and thought I would share.
1. I am using a 320GB LaCie drive to do manual backups once a week (or whenever I feel it's a necessity). 2. Amazon S3 (talked about it before) is what I am using for remote backups in conjunction with JungleDisk and rsync to make incremental backups once a month or whenever I need to. 3. A monthly DVD that is burned of all important data (e-mail, documents, etc.) I also upload my photos to flickr but only some of them, I will back all of them up in the original form to S3. I am going to be trying this setup out over the next few months and seeing how it works. I performed my first major backup to S3 this morning. It was about 3GB of e-mail and took approximately 38 minutes. Not the fastest upload but it works and I'm happy with it. The JungleDisk system for OS X kind of stinks, because you have to tell Finder to connect everytime instead of being able to make it a favorite.
