So uh. If I carry a fully-charged, spare laptop battery around with me, does the charge deplete while it's just sitting there, and would I need to charge it back up every now and then, or how's that whole thing work?

Chances are the charge will dissipate slowly, more so in humid weather. Best way to predict how long the charge will last is just through testing. Toss it in your laptop a week after charging it and see how much charge it has remaining. It shouldn't lose much in that time, but ya never know.
