Jet fuel burns at 800° to 1500°F, not hot enough to melt steel at 2750°F yet molten steel and melted steel girders were found at Ground Zero. How did the "terrorists" defy physics?

They didn't defy physics. The structural strength of steel is derated at high temperatures (this means, at high temperatures, steel will fail at lower stresses). So if you have steel that is suddenly the strength of wood + the weight of the building and forces of wind, you have one doomed building.
