for the fourth I was feeling saucy so I grilled bison kabobs w/yellow onion, red and green bell peppers, baby portabello mushrooms, and cherry tomatoes.

side was sweet corn on the cob, grilled in husk.

llano merlot and hand crampin coors light.

all was organic and texas grown. except the silver bullet.

bison kicks more ass than any one meat should...lower in cholesterol, fat, and calories...plus more iron and protein than beef, chicken, and pork. plus it tastes rad like beef and isnt gamey.

I've never been into hippie foods, but I made a diet change about 4 weeks ago.

yall were talking about fruit and I couldn't for the life of me recall when the last time i had a piece of fruit was...and that kinda ticked me off.

so now my "diet" is simply two-fold:
1-fruit for breakfast
2-no processed foods

just that alone I feel a ton better.

anyway I stumbled across the bison because I accidentally went to whole foods.

I've only gone there once when I lived down in lower greenville and it annoyed me because I loathe overpriced trustafarian hippie/yuppie crap and I figured that was what that place was.

however I have to admit I fell in love iwth their meat and produce sections. cheap ass wine, all produce and meat is local and organic. not to mention larger and more colorful than the crap at tom thumb.

I have a newfound obsession with that place for meat and produce.

regarding cooking buffalo, since it's a fraction of the fat of beef, it does not shrink when cooked, but it also cooks in half the time. furthermore rare to medium rare is the recommended length...well done is not recommended. fine by me as I like my lean beef like filets rare.

the most important thing though is taste. this shit tastes rad...full flavored like beef but maybe even slightly sweet. ZERO gameyness orwhat you "think" bison may taste like.

prices here were $8 a lb for sirloin, $16 a lb for ribeye...I didn't buy the ground round so I don't know the price.

I've had buffalo burgers before, and I really never cared for them.

I'd much rather eat elk or moose.

I haven't tried the ground meat/burgers...

I'm grilling some more steaks tonight though. shit is good. but absolutely nothing like venison.
