Oven-roasted tamarind curry drumsticks
-6 chicken drumsticks -mixture of tamarind*, brown sugar, cumin, paprika, chili powder, salt, pepper (amount to your taste, I ended up with about 1/3 to 1/2 cup of paste-like stuff) -brush drumsticks with mixture -place in oven at 375 for 10 minutes, flip, another 10 minutes. -broil for 3 minutes per side coconut almond rice - 1.5 cups rice - 1 cup coconut milk - 2 cups water - 3 tbs butter - 4 cloves of garlic - slivers of almonds, chopped chives, raisins (I used dried cherries) - melt butter, sautée garlic, add rice, sautee for another couple of minutes - add the liquids, cook rice as usual (25-30 min) - garnish with almonds, chives and raisins sugared tomatoes - sugar - tomatoes - mix tomatoes with sugar (to taste) I don't know what's in the trout Mixed fruit salad - Corn, cherry tomatoes, avocado, red pepper (not shown in pic), cilantro - lime juice, salt, pepper, olive oil - combine to taste *The tamarind I used was from a block of dehydrated tamarind which I had to rehydrate and de-pulp. Yeah, those tamarind blocks really are a pain. If I'm going for something with a sweet/somewhat spicy taste, I try to use tamarind chutney instead and adjust the rest of the recipe accordingly. I need to check my HEB and see if they have a decent brand...

It's a fruit that looks kinda like a pea, with a pit in the middle. It's the key ingredient in pad thai, the sweet/sour taste you taste. Sometimes people substitute lime or lemon, but they don't have the same effect. Tamarind is not as acidic tasting as lime or lemon, and it's slightly sweeter.
